Garlic Tomato Shrimp with Orzo

A flavorful Mediterranean-style shrimp dish featuring garlicky tomato sauce served over tender orzo. This one-pan recipe is quick, healthy, and packed with bold flavors from fresh herbs and spices.

Ingredients

  • 1 lb large shrimp, peeled and deveined
  • Salt and pepper, to taste
  • 1 tsp ground coriander
  • 1 tsp sweet paprika
  • Extra virgin olive oil
  • 6 garlic cloves, chopped
  • 1 pint cherry or grape tomatoes, halved
  • ½ cup white wine (or broth)
  • ¼ cup chopped fresh parsley
  • ¼ cup chopped fresh dill
  • Juice of ½ lemon
  • 1 cup orzo pasta
  • 2 cups water or broth (for orzo)
  • Salt to taste for orzo

Instructions

  1. Season shrimp with salt, pepper, coriander, and paprika. Toss to coat and set aside.
  2. In a large pan, heat a generous drizzle of olive oil over medium heat. Add garlic and sauté briefly until fragrant.
  3. Add cherry tomatoes and a pinch of salt. Cook until tomatoes begin to soften and release juices, about 5-7 minutes.
  4. Pour in white wine (or broth) and simmer until slightly reduced, about 3 minutes.
  5. Add seasoned shrimp to the pan and cook for about 3-4 minutes, turning once, until pink and cooked through.
  6. Stir in fresh parsley, dill, and a squeeze of lemon juice. Remove from heat and cover to keep warm.
  7. Meanwhile, cook orzo in boiling salted water or broth according to package directions until al dente. Drain any excess liquid.
  8. Serve garlic tomato shrimp over a bed of orzo, spooning sauce over the top.

Notes

  • Use broth instead of wine for a non-alcoholic version.
  • Fresh herbs are key to bright Mediterranean flavor – don’t skip them!
  • For extra heat, add a pinch of red pepper flakes when cooking the garlic.
  • Try whole wheat orzo for added fiber and nutrients.
