A rich and comforting Filipino dish made with tender meat, squash, and string beans simmered in creamy coconut milk. This savory stew is packed with flavor from aromatics and shrimp paste.

Ingredients

  • 3 lbs. kalabasa (cubed)
  • 18 pieces string beans (cut into 2-inch pieces)
  • 1 1/2 lbs. chicken thighs (diced)
  • 24 ounces coconut milk
  • 2 tablespoon shrimp paste
  • 1 onion (chopped)
  • 3 thumbs ginger (julienned)
  • 8 cloves garlic
  • 8 grams Maggi Magic Sarap
  • 1 cup water

Instructions

  1. Heat a wok and sear the chicken until lightly browned and juices begin to release.
  2. Push the chicken to the side and sauté garlic, onion, and ginger until fragrant and the onion softens.
  3. Pour in the coconut milk, cover, and simmer for 40 to 50 minutes.
  4. Add shrimp paste and water, then bring to a boil.
  5. Add the cubed kalabasa, cover, and cook for 8 minutes.
  6. Add the string beans, stir, and continue cooking for 5 minutes.
  7. Season with Maggi Magic Sarap.
  8. Serve hot and enjoy.

Notes

  • Chicken thighs keep the dish tender and flavorful, but breast meat can also be used for a leaner option.
  • Adjust the thickness of the sauce by adding more or less water.
  • Best served with steamed rice.
  • Store leftovers in the refrigerator for up to 3 days.
