These Greek Chicken Bowls are a healthy, flavorful meal packed with juicy grilled chicken, fresh vegetables, tzatziki sauce, and brown rice. Perfect for meal prep or a light dinner, these bowls are customizable and delicious.

Ingredients

  • 1 1/2 pounds boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 cups cooked brown rice
  • 1 cup chopped cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1/4 small red onion, thinly sliced
  • 1 cup tzatziki sauce
  • Fresh chopped parsley, for garnish

Instructions

  1. In a large bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
  2. Add the chicken breasts to the marinade, turning to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Preheat a grill or grill pan over medium-high heat. Remove chicken from the marinade and grill for 5-7 minutes per side, or until cooked through and internal temperature reaches 165°F (74°C).
  4. Let the chicken rest for 5 minutes, then slice.
  5. To assemble the bowls, divide the cooked brown rice among 4 bowls.
  6. Top each bowl with sliced chicken, cucumber, cherry tomatoes, olives, feta, and red onion.
  7. Drizzle with tzatziki sauce and garnish with fresh parsley.
  8. Serve immediately or store in meal prep containers for up to 4 days.
