Ingredients
2 slices of whole wheat bread
1/2 cup fresh spinach leaves
2 slices of cheese (cheddar or your choice)
1 tablespoon butter
1 clove garlic (optional, finely chopped)
Salt to taste
Pepper to taste
Instructions
Heat a pan over medium heat and add a little butter.
Sauté the chopped garlic (if using) for a few seconds until fragrant.
Add the spinach leaves, season with salt and pepper, and cook until wilted. Set aside.
Butter one side of each bread slice.
Place one slice, buttered side down, on the skillet. Add a slice of cheese, sautéed spinach, and the second slice of cheese.
Top with the second slice of bread, buttered side up.
Grill until the bread is golden brown and crispy on one side, then flip and grill the other side until golden and cheese is melted.
Remove from pan, slice, and serve hot.
Notes
You can add more veggies like mushrooms or tomatoes for variation.
