A delicious fusion of grilled cheese sandwich and burrito, this Grilled Cheese Burrito is packed with seasoned beef, nacho cheese, rice, sour cream, and a crispy cheese crust on the outside.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1/2 cup water
  • 1 cup cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup nacho cheese sauce
  • 1/2 cup sour cream
  • 1/2 cup chipotle sauce
  • 1/2 cup shredded lettuce
  • 1/2 cup shredded cheese blend (Mexican blend)
  • 4 large flour tortillas
  • Butter for grilling

Instructions

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  2. Add taco seasoning and water. Stir and simmer for 5 minutes until thickened.
  3. Warm the flour tortillas slightly to make them pliable.
  4. Layer each tortilla with rice, seasoned beef, nacho cheese, sour cream, chipotle sauce, lettuce, and shredded cheese blend.
  5. Fold the sides and roll into a burrito.
  6. In a clean skillet, sprinkle shredded cheddar cheese in a circular shape slightly larger than the burrito.
  7. Place the burrito seam side down on the melting cheese and let it cook until the cheese becomes golden and crispy.
  8. Carefully flip or press the burrito to seal the cheese onto the outside.
  9. Remove and let it cool slightly before serving.

Notes

  • You can customize the fillings to your liking, including beans, guacamole, or hot sauce.
  • Use a non-stick skillet for best results when crisping the cheese crust.
  • Make sure the burrito is tightly rolled so it holds together when grilling.
