This Grilled Mesquite Chicken Sandwich is packed with smoky flavor from mesquite-seasoned grilled chicken, fresh vegetables, and optional toppings, all served on a toasted bun. It’s perfect for cookouts or easy weeknight meals.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons mesquite seasoning
  • 2 tablespoons olive oil
  • 4 hamburger buns or sandwich rolls
  • 4 lettuce leaves
  • 8 tomato slices
  • 4 slices red onion (optional)
  • 8 pickle slices (optional)
  • 4 cheese slices (cheddar, provolone, or pepper jack – optional)
  • 1/4 cup mayonnaise, BBQ sauce, or sandwich spread of choice

Instructions

  1. Preheat your grill to medium-high heat.
  2. Pound the chicken breasts to an even thickness for consistent cooking.
  3. Rub the chicken with olive oil and coat generously with mesquite seasoning.
  4. Grill the chicken for 5–7 minutes per side, or until internal temperature reaches 165°F and grill marks appear.
  5. Toast the buns on the grill during the last minute of cooking.
  6. Spread desired condiments on the buns.
  7. Assemble the sandwich by layering grilled chicken, lettuce, tomato, and any optional toppings like cheese, onions, or pickles.
  8. Serve hot and enjoy immediately.

Notes

  • Marinate the chicken in the seasoning and olive oil for extra flavor.
  • Use whole wheat buns or lettuce wraps for a healthier option.
  • Store leftover grilled chicken separately and assemble sandwiches fresh.
  • Can be cooked on a stovetop grill pan or in a skillet if grill isn’t available.
