This Ground Beef Stroganoff is a lighter, high-protein version of the classic comfort dish. Made with lean ground beef, a creamy sauce, and served over your favorite pasta, it’s a satisfying and healthy meal that doesn’t compromise on flavor.

Ingredients

  • 1 lb lean ground beef (90% lean or higher)
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup low-sodium beef broth
  • 1/2 cup plain Greek yogurt (or sour cream for a richer version)
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt (adjust to taste)
  • 2 tbsp olive oil (for cooking)
  • 1 cup sliced mushrooms (optional but recommended)
  • 2 cups whole-wheat egg noodles (or any pasta of your choice)
  • Fresh parsley, chopped (for garnish)

Instructions

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions, then drain and set aside.
  • Brown the Ground Beef:
  • Heat 1 tablespoon of olive oil in a large skillet or pan over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until browned and cooked through (about 5-7 minutes). Drain any excess fat if needed, then transfer the beef to a plate and set aside.
  • Cook the Onions, Garlic, and Mushrooms:
  • In the same skillet, add the remaining 1 tablespoon of olive oil. Add the chopped onion and cook for 3-4 minutes until softened. Add the garlic and cook for an additional 30 seconds.
  • If using, add the sliced mushrooms and cook for 4-5 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.
  • Make the Sauce:
  • Add the cooked ground beef back into the skillet with the onions, garlic, and mushrooms. Stir in the beef broth, Dijon mustard, Worcestershire sauce, paprika, salt, and pepper. Bring to a simmer and cook for 5 minutes, allowing the flavors to meld together.
  • Finish the Dish:
  • Reduce the heat to low and stir in the Greek yogurt (or sour cream) to create a creamy sauce. Stir until the sauce is well combined and heated through. If the sauce is too thick, add a little more beef broth to reach your desired consistency.
  • Serve:
  • Serve the beef stroganoff over the cooked pasta. Garnish with fresh parsley for added color and flavor.
