Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp paprika
1/2 tsp ground cumin
1/2 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
1 cup fresh spinach
1/2 cup shredded cheese (optional)
Instructions
Preheat the oven to 400°F (200°C) and lightly grease a baking dish.
Heat olive oil in a large skillet over medium heat. Add diced onion and cook until softened, about 3–4 minutes.
Add minced garlic and cook for about 30 seconds until fragrant.
Add ground turkey to the skillet and cook until browned, breaking it apart with a spoon.
Stir in paprika, cumin, oregano, salt, and black pepper. Mix well to combine.
Add diced sweet potatoes and spinach to the skillet and stir until evenly combined with the turkey mixture.
Transfer the mixture to the prepared baking dish and spread evenly.
Sprinkle shredded cheese on top if using.
Bake for 25–30 minutes, or until the sweet potatoes are tender and the top is lightly golden.
Remove from the oven, allow to cool slightly, and serve warm.
Notes
You can substitute ground chicken for ground turkey if preferred.
Add bell peppers or zucchini for extra vegetables.
For a dairy-free version, omit the cheese or use a dairy-free alternative.
