Guacamole Stuffed Tomatoes are a fresh, healthy appetizer made by hollowing out juicy cherry tomatoes and filling them with creamy, homemade guacamole. Perfect for parties or as a light snack.

Ingredients

  • 15 large cherry tomatoes
  • 2 ripe avocados
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon sea salt, or to taste
  • Pinch of black pepper

Instructions

  1. Slice the top off each cherry tomato and use a small spoon or melon baller to carefully scoop out the seeds and pulp. Set the hollowed tomatoes upside down on a paper towel to drain.
  2. In a mixing bowl, mash the avocados with a fork until mostly smooth.
  3. Add the red onion, cilantro, lime juice, salt, and pepper. Stir until well combined.
  4. Flip the tomatoes upright and gently fill each one with the guacamole mixture using a small spoon or piping bag.
  5. Serve immediately or chill in the refrigerator for up to an hour before serving.

Notes

  • Use ripe but firm avocados for the best texture.
  • These are best served fresh to prevent the guacamole from browning.
  • Feel free to customize the guacamole with jalapeños or garlic for added flavor.
