This Hawaiian Chicken & Caramelized Onion Pizza combines sweet and savory flavors with tender chicken, juicy pineapple, rich mozzarella cheese, and golden caramelized onions on a crispy pizza crust.

Ingredients

  • 1 (12-inch) prepared pizza crust
  • 1 tablespoon olive oil
  • 1 cup thinly sliced yellow onions
  • 1½ cups cooked chicken breast, diced (preferably Gold’n Plump)
  • ½ cup barbecue sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup pineapple tidbits, drained
  • 2 tablespoons chopped fresh cilantro (optional)

Instructions

  1. Preheat oven to 425°F.
  2. Heat olive oil in a skillet over medium heat. Add onions and cook, stirring frequently, for 10–15 minutes or until golden and caramelized. Set aside.
  3. Place the pizza crust on a baking sheet or pizza pan.
  4. Spread barbecue sauce evenly over the crust.
  5. Top with diced chicken, caramelized onions, pineapple tidbits, and shredded mozzarella cheese.
  6. Bake for 12–15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  7. Remove from oven and sprinkle with chopped fresh cilantro if desired.
  8. Slice and serve warm.

Notes

  • Use a pre-cooked rotisserie chicken for convenience.
  • Try adding red pepper flakes for a spicy kick.
  • Pairs well with a light salad or fruit side dish.
