Ingredients

  • 2 boneless, skinless chicken breasts
  • 8 oz whole wheat pasta (penne or fettuccine)
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup low-sodium chicken broth
  • 1/2 cup milk (low-fat or unsweetened plant-based)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the whole wheat pasta according to the package instructions. Drain and set aside.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Season the chicken breasts with salt, pepper, and Italian seasoning.
  4. Add the chicken to the skillet and cook for 5–6 minutes per side, or until golden and cooked through. Remove from skillet and set aside.
  5. In the same skillet, add minced garlic and sauté for 1–2 minutes until fragrant.
  6. Pour in the chicken broth and milk. Stir and bring to a simmer.
  7. Reduce the heat and slowly stir in the grated Parmesan cheese until melted and the sauce begins to thicken.
  8. Slice the cooked chicken into strips and return it to the skillet.
  9. Add the cooked pasta and toss everything together until well coated with the sauce.
  10. Garnish with fresh parsley if desired, and serve warm.
