This Healthy Mushroom Stuffed Chicken Breast recipe is a flavorful, low-calorie meal that combines tender chicken breast with a savory mushroom filling. Packed with nutrients, it’s a great choice for anyone looking to eat healthily without sacrificing taste. Perfect for a dinner that’s both satisfying and nutritious.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup mushrooms, finely chopped (such as cremini or button mushrooms)
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup low-fat cream cheese (or Greek yogurt for a lighter option)
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 tablespoon fresh lemon juice

Instructions

  • Preheat the oven to 375°F (190°C).
  • Prepare the chicken breasts: Using a sharp knife, create a pocket in the middle of each chicken breast, being careful not to cut all the way through.
  • Make the stuffing: In a skillet, heat olive oil over medium heat. Add the garlic and chopped mushrooms. Cook until the mushrooms release their moisture and become tender, about 5-7 minutes. Stir in the cream cheese (or Greek yogurt) and Parmesan cheese, and cook until the mixture becomes creamy. Season with salt, pepper, and thyme.
  • Stuff the chicken: Carefully stuff each chicken breast with the mushroom mixture, securing the opening with toothpicks.
  • Cook the chicken: Heat a bit of olive oil in the skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.
  • Bake: Transfer the chicken breasts to the oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  • Finish and serve: Remove the toothpicks, drizzle the stuffed chicken with fresh lemon juice, and sprinkle with chopped parsley before serving.

Notes

  • Feel free to substitute the Parmesan with a dairy-free alternative for a vegan version.
  • You can add spinach or other greens to the mushroom stuffing for extra nutrients.
  • For a richer flavor, use a mix of wild mushrooms like shiitake or portobello.
