This Hearty Meat and Potatoes Skillet is a comforting, one-pan meal packed with savory ground beef, tender potatoes, and flavorful seasonings. Perfect for busy weeknights, this easy skillet dinner is ready in under 30 minutes and is sure to satisfy the whole family.

Ingredients

  • 1 lb ground beef (or ground sausage)
  • 3 medium potatoes, diced
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, diced (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp chili powder (optional for a kick)
  • ½ cup shredded cheese (cheddar or mozzarella, optional)
  • 2 tbsp olive oil
  • ¼ cup beef broth or water
  • Fresh parsley for garnish

Instructions

  • Cook the Meat – In a large skillet, heat 1 tbsp olive oil over medium heat. Add ground beef and cook until browned. Drain excess grease if needed.
  • Sauté the Veggies – Add the remaining 1 tbsp olive oil, then stir in the chopped onion, garlic, and bell peppers. Sauté for 2-3 minutes until fragrant.
  • Add Potatoes & Seasonings – Stir in diced potatoes, salt, pepper, paprika, oregano, and chili powder. Mix well to coat the potatoes in the seasoning.
  • Simmer – Pour in the beef broth, cover the skillet, and reduce heat to medium-low. Cook for 10-15 minutes, stirring occasionally, until potatoes are tender.
  • Finish & Serve – If using cheese, sprinkle it on top and let it melt. Garnish with fresh parsley and serve warm.
