Ingredients

For the Crust:

  • 1 ½ cups graham cracker crumbs

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • 1 package (3.4 oz) instant pistachio pudding mix
  • ½ cup chopped pistachios

  • 1 can (21 oz) cherry pie filling

Instructions

  1. Prepare the Crust: Preheat oven to 325°F (163°C). Line an 8×8-inch baking pan with parchment paper. In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture firmly into the bottom of the pan. Bake for 8 minutes, then let cool.
  2. Make the Cheesecake Filling: Beat cream cheese and sugar until smooth. Add eggs one at a time, then mix in vanilla extract and sour cream. Stir in the pistachio pudding mix and chopped pistachios until well combined.
