These Herb Roasted Sweet Potatoes are crispy on the outside, tender on the inside, and packed with flavor from fresh herbs and garlic. A perfect healthy side dish for any meal, ready in under an hour.

Ingredients

  • 2 pounds sweet potatoes, peeled and cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 teaspoon fresh thyme, finely chopped
  • Salt and pepper, to taste
  • Optional: chopped parsley, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large mixing bowl, combine sweet potatoes, olive oil, garlic, Italian seasoning, rosemary, thyme, salt, and pepper. Toss until evenly coated.
  3. Spread the sweet potatoes in a single layer on a large baking sheet lined with parchment paper.
  4. Roast for 35–40 minutes, flipping halfway through, until tender and golden brown on the edges.
  5. Remove from oven, garnish with chopped parsley if desired, and serve warm.

Notes

  • Cut sweet potatoes into evenly sized pieces to ensure uniform cooking.
  • You can use dried herbs if fresh herbs are not available—just reduce the quantity by half.
  • Double the recipe to serve a crowd or for meal prep.
  • Leftovers can be stored in the fridge and reheated in the oven or air fryer for best texture.
