Ingredients
1 cup light cream cheese, softened
1 cup plain Greek yogurt (2% or nonfat)
1/3 cup vanilla protein powder
2 tablespoons honey or maple syrup
1 teaspoon vanilla extract
1/2 cup fresh strawberries, finely diced
1/2 cup crushed graham crackers or almond flour (for base)
1 tablespoon melted coconut oil or butter (for base)
Instructions
In a bowl, mix crushed graham crackers (or almond flour) with melted coconut oil until combined. Press mixture into the bottoms of a lined mini muffin tin to form the base.
In a separate mixing bowl, beat softened cream cheese until smooth.
Add Greek yogurt, protein powder, honey, and vanilla extract. Mix until creamy and fully combined.
Fold in the finely diced strawberries.
Spoon the cheesecake mixture evenly over the prepared bases.
Freeze for 1–2 hours or until firm.
Remove from muffin tin and allow to sit at room temperature for 5 minutes before serving.
