These homemade baked fish sticks are a healthier twist on the classic, made with tender white fish, coated in crispy breadcrumbs, and baked to golden perfection. Perfect for kids and adults alike, they’re easy to make and freezer-friendly.

Ingredients

  • 1 pound cod or halibut fillets, cut into 1-inch wide strips
  • 1/3 cup whole wheat flour
  • 2 large eggs
  • 1 tablespoon dijon mustard
  • 1 cup whole wheat panko breadcrumbs
  • 1/3 cup grated parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • Olive oil cooking spray

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper and set a wire rack on top. Spray the rack with nonstick cooking spray.
  2. Pat the fish dry with paper towels and season lightly with salt and pepper.
  3. Set up a dredging station with three shallow bowls: place flour in the first, beat the eggs and mustard in the second, and mix breadcrumbs, parmesan, and spices in the third.
  4. Dip each fish strip into the flour, then the egg mixture, and finally coat with the breadcrumb mixture, pressing gently to adhere.
  5. Place the coated fish sticks on the prepared rack. Lightly spray the tops with olive oil cooking spray.
  6. Bake for 15-20 minutes or until golden brown and fish flakes easily with a fork, flipping halfway through for even browning.
  7. Serve immediately with your favorite dipping sauce.

  • To make these gluten-free, use gluten-free flour and breadcrumbs.
  • They can be frozen after baking and reheated in the oven or air fryer.
  • For extra crispiness, use an air fryer instead of baking.
