Ingredients

  • For the cookie crust:
  • 1 package sugar cookie dough (or homemade sugar cookie dough)
  • For the frosting:
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup heavy whipping cream (whipped into stiff peaks)
  • For the fruit topping:
  • Fresh strawberries, sliced
  • Fresh kiwi, peeled and sliced
  • Fresh blueberries
  • Fresh pineapple, cubed
  • Fresh grapes, halved

Instructions

  • Prepare the Cookie Base:
  • Preheat the oven to 350°F (175°C).
  • Roll out the sugar cookie dough onto a lightly greased pizza pan or baking sheet. Press the dough evenly to form a circular crust.
  • Bake for 10–12 minutes, or until golden brown. Remove from the oven and let it cool completely.
  • Make the Frosting:
  • In a large mixing bowl, beat the softened cream cheese until smooth.
  • Add powdered sugar and vanilla extract, and mix until well combined.
  • Gently fold in the whipped heavy cream to create a fluffy, light frosting.
  • Assemble the Fruit Pizza:
  • Once the cookie base has cooled, spread a generous layer of the frosting over the crust, leaving a small border around the edges.
  • Arrange the sliced fruits on top of the frosting in a decorative pattern, creating a colorful, vibrant design.
  • Serve and Enjoy:
  • Slice into wedges and serve immediately. Refrigerate any leftovers for up to 2 days.

Notes

  • Feel free to mix and match fruits based on what’s in season or your favorites.
  • For a different flavor, you can add a splash of almond extract to the frosting for a twist.
  • If you want a crispier base, bake the cookie crust a bit longer until golden and firm.
