This homemade microwave lemon curd is a quick and easy recipe that delivers smooth, creamy, and tangy lemon curd in just minutes. Perfect for spreading on toast, filling cakes, or enjoying by the spoonful.

Ingredients

  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup fresh lemon juice (about 46 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup unsalted butter, melted

Instructions

  1. In a large microwave-safe bowl, whisk together the sugar and eggs until smooth and combined.
  2. Stir in the lemon juice, lemon zest, and melted butter.
  3. Microwave the mixture on high in 1-minute intervals, stirring well after each minute.
  4. Repeat for about 4-6 minutes or until the mixture thickens and coats the back of a spoon.
