Ingredients

  • For the Cupcakes:
  • 1 ½ cups all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup whole milk
  • 1 cup fresh peaches, peeled and diced
  • For the Honey Cream Cheese Frosting:
  • 8 oz cream cheese, softened
  • ¼ cup unsalted butter, softened
  • ½ cup powdered sugar
  • 3 tbsp honey
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, cream butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then add vanilla extract.
  • Alternate adding dry ingredients and milk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined.
  • Gently fold in diced peaches.
  • Divide batter evenly among cupcake liners, filling about 2/3 full.
  • Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean. Let cool completely.
  • For the frosting, beat cream cheese and butter until smooth. Add powdered sugar, honey, and vanilla, and beat until creamy and fluffy.
  • Frost cooled cupcakes generously with the honey cream cheese frosting. Optionally, garnish with thin peach slices or a drizzle of honey.
