This irresistible Apple Fritter Cake brings together the warm flavors of spiced apples and cinnamon-swirl cake, topped with a sweet glaze. Perfect for cozy mornings or a comforting dessert.

Ingredients

  • 1/3 cup light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 large apples (peeled, cored, and chopped)
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/3 cup water
  • 1/2 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 teaspoons baking powder
  • 1/2 cup milk
  • 1/2 cup powdered sugar
  • 12 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a small bowl, mix 1/3 cup brown sugar and 1 tsp cinnamon; set aside for the swirl.
  3. In a saucepan, combine apples, 2 tbsp sugar, 1/2 tsp cinnamon, and 1/3 cup water. Cook over medium heat for 5–7 minutes until apples are tender. Set aside to cool.
  4. In a large bowl, cream together butter and 2/3 cup sugar until light and fluffy.
  5. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  6. In a separate bowl, whisk together flour and baking powder. Gradually add to creamed mixture alternately with 1/2 cup milk. Mix until just combined.
  7. Pour half of the batter into the prepared loaf pan. Layer with half of the apple mixture and half of the cinnamon-sugar mixture. Repeat layers.
  8. Use a knife to gently swirl the batter for a marbled effect.
  9. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for 10–15 minutes before transferring to a wire rack.
  11. For the glaze, mix powdered sugar with 1–2 tbsp milk until smooth. Drizzle over the cooled cake.
