This homemade Italian dressing is a perfect blend of olive oil, vinegar, and herbs, creating a zesty and flavorful dressing for salads, marinades, and more. Made with simple pantry ingredients, it’s fresher and healthier than store-bought versions.

Ingredients

  • ½ cup extra virgin olive oil
  • ¼ cup red wine vinegar
  • 1 tablespoon lemon juice (optional, for extra tang)
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or sugar (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried parsley
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional, for a little heat)

Instructions

  1. In a small bowl or jar, whisk together the olive oil, red wine vinegar, and lemon juice.
  2. Add the Dijon mustard, honey (if using), and minced garlic, and whisk until combined.
  3. Stir in the dried oregano, basil, thyme, parsley, salt, black pepper, and red pepper flakes.
  4. Shake or whisk well until the dressing is fully emulsified.
  5. Taste and adjust seasoning if needed.
  6. Store in an airtight container in the refrigerator for up to 1 week. Shake well before using.

Notes

  • For a creamy Italian dressing, add 2 tablespoons of grated Parmesan cheese and 2 tablespoons of mayonnaise or Greek yogurt.
  • You can substitute white wine vinegar or apple cider vinegar for red wine vinegar.
  • Fresh herbs can be used instead of dried, but double the amount for the best flavor.
