This Jiffy Mexican Cornbread Casserole is a delicious and easy-to-make dish featuring a savory combination of cornbread, seasoned beef, and melty cheese. Ingredients

  • 1 box of Jiffy Cornbread Mix
  • 1 lb ground beef
  • 1 can (15 oz) of diced tomatoes with green chilies (such as Rotel)
  • 1 can (15 oz) of black beans, drained and rinsed
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup milk
  • 1 egg

Instructions

  • Preheat the oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
  • Cook the ground beef: In a skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  • Add seasonings: Stir in chili powder, cumin, garlic powder, salt, and pepper. Add the diced tomatoes with green chilies and black beans. Let the mixture simmer for about 5 minutes, then remove from heat.
  • Prepare the cornbread batter: In a bowl, combine the Jiffy cornbread mix, egg, milk, and sour cream. Stir until just combined. The batter should be thick.
  • Assemble the casserole: Spread the beef and bean mixture evenly in the prepared casserole dish. Pour the cornbread batter on top and spread it out evenly.
  • Bake: Sprinkle the shredded cheddar cheese on top of the cornbread batter. Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through.
