Ingredients
1 lb potato gnocchi
6 oz smoked salmon, sliced or flaked
1 tablespoon olive oil
2 tablespoons butter
3 cloves garlic, minced
1 small shallot, finely diced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 tablespoon lemon juice
1 teaspoon lemon zest
1/4 teaspoon black pepper
1/4 teaspoon salt (adjust to taste)
2 tablespoons fresh dill, chopped
1 tablespoon fresh parsley, chopped
Instructions
Bring a large pot of salted water to a boil and cook the gnocchi according to package instructions. Drain and set aside.
In a large skillet over medium heat, add olive oil and butter.
Sauté the shallot for 2-3 minutes until softened, then add the garlic and cook for 30 seconds until fragrant.
Pour in the heavy cream and bring to a gentle simmer. Cook for 3-5 minutes until slightly thickened.
Stir in the Parmesan cheese, lemon juice, lemon zest, salt, and black pepper. Mix until smooth.
Add the cooked gnocchi to the skillet and gently toss to coat in the sauce.
Fold in the smoked salmon and cook for 1-2 minutes until heated through.
Remove from heat and garnish with fresh dill and parsley before serving.
Notes
Do not overcook the smoked salmon to maintain its tender texture.
You can substitute half-and-half for a lighter sauce.
Add spinach or peas for extra color and nutrients.
Adjust salt carefully as smoked salmon and Parmesan are naturally salty.
