This Keto Chicken Broccoli Casserole is a creamy, cheesy, and comforting low-carb dish packed with tender chicken, fresh broccoli, and melted cheese—perfect for a satisfying weeknight meal or meal prep.

Ingredients

  • 2 cups cooked and shredded chicken breast
  • 3 cups broccoli florets, steamed or blanched
  • 4 oz cream cheese
  • 1/2 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese, divided
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup grated parmesan cheese
  • 1 tbsp olive oil or butter (for greasing baking dish)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly grease a 9×13-inch baking dish with olive oil or butter.
  3. In a large bowl, combine the cooked, shredded chicken and steamed broccoli.
  4. In a saucepan over medium heat, melt the cream cheese and stir in the heavy cream until smooth.
  5. Add garlic powder, onion powder, salt, and pepper to the cream mixture.
  6. Stir in half of the shredded cheddar cheese and mix until melted and combined.
  7. Pour the cheese sauce over the chicken and broccoli and mix well to coat.
  8. Transfer the mixture to the prepared baking dish and spread evenly.
  9. Sprinkle the remaining cheddar cheese and parmesan on top.
  10. Bake for 20–25 minutes or until the top is bubbly and golden.
  11. Let it rest for 5 minutes before serving.
