A classic Middle Eastern dessert made with crispy shredded phyllo, a rich cheese filling, and fragrant sugar syrup. Knafeh is golden, buttery, and irresistibly sweet with a hint of rose or orange blossom.

Ingredients

  • 1 lb kataifi shredded phyllo dough
  • 1 cup unsalted butter, melted
  • 1 lb mozzarella cheese, shredded
  • 1/2 cup ricotta cheese
  • 1 cup sugar
  • 1/2 cup water
  • 1 teaspoon lemon juice
  • 1 teaspoon rose water or orange blossom water
  • 1/4 cup crushed pistachios

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Prepare the syrup by combining sugar and water in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes. Add lemon juice and rose water, then set aside to cool.
  3. Separate the kataifi dough strands and mix with melted butter until fully coated.
  4. Press half of the buttered dough into a greased baking dish to form an even base.
  5. Mix mozzarella and ricotta, then spread evenly over the base.
  6. Cover with the remaining kataifi dough and press gently.
  7. Bake for 35–40 minutes until golden and crisp.
  8. Remove from oven and immediately pour cooled syrup evenly over the hot knafeh.
  9. Garnish with crushed pistachios, slice, and serve warm.

Notes

  • Use fresh mozzarella for best melting texture.
  • Orange blossom water can be substituted with vanilla if unavailable.
  • Serve immediately for optimal crispness.
  • Store leftovers refrigerated and reheat before serving.
