Ingredients

  • 3 large eggs
  • 1/4 cup red onion (finely chopped)
  • 1/4 cup tomato (finely chopped)
  • 1/4 cup green bell pepper (finely chopped)
  • 12 green chilies (finely chopped, optional for heat)
  • 2 tbsp fresh coriander (chopped)
  • 1/4 tsp cumin powder
  • 1/4 tsp red chili powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp garam masala
  • Salt and pepper to taste
  • 1 tbsp butter or oil (for cooking)

Instructions

  • Prepare the Veggies:
  • In a mixing bowl, add the finely chopped red onion, tomato, green bell pepper, green chilies (if using), and fresh coriander.
  • Season with a pinch of salt and pepper. Stir to combine.
  • Spice it Up:
  • In a small bowl, whisk together the eggs, cumin powder, red chili powder, turmeric, and garam masala. Add a pinch of salt and pepper to taste.
  • Cook the Omelette:
  • Heat the butter or oil in a non-stick skillet over medium heat.
  • Once hot, add the vegetable mixture to the pan and sauté for 1-2 minutes until slightly softened and aromatic.
  • Pour the Egg Mixture:
  • Pour the seasoned egg mixture over the sautéed vegetables in the skillet, making sure the vegetables are evenly distributed across the omelette.
  • Reduce the heat to low and cover the pan. Let the omelette cook for 3-4 minutes or until the eggs are set but still moist inside. If you prefer a fully cooked omelette, you can flip it and cook for another minute.
  • Serve:
  • Once cooked to your liking, gently slide the omelette onto a plate and serve hot with fresh naan or toasted bread.

Notes

  • You can customize this omelette by adding other vegetables such as spinach, mushrooms, or carrots.
  • For an extra boost of flavor, drizzle a little bit of yogurt on top before serving.
  • If you want a non-spicy version, skip the green chilies and reduce the amount of chili powder.
