Ingredients

  • For the Marinade:
  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Zest and juice of 1 large lemon
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped (or 2 tbsp dried basil)
  • 1 tsp honey (optional, for a hint of sweetness)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • For Garnish (optional):
  • Fresh basil leaves, chopped
  • Lemon slices or wedges

Instructions

  • Prepare the marinade:
  • In a bowl, combine the olive oil, lemon zest, lemon juice, garlic, chopped basil, honey (if using), salt, and black pepper. Stir well to combine.
  • Marinate the chicken:
  • Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish and refrigerate for at least 30 minutes, or up to 2 hours for more intense flavor.
  • Cook the chicken:
  • Grill Method: Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
  • Pan-Seared Method: Heat a skillet over medium heat with a bit of olive oil. Remove the chicken from the marinade and cook for 6-7 minutes per side, or until the chicken is fully cooked through and golden brown on the outside.
  • Rest the chicken:
  • Once the chicken is cooked, remove it from the heat and let it rest for 5 minutes to retain its juices.
  • Serve:
  • Slice the chicken and serve it with a garnish of fresh basil and lemon slices or wedges on the side.

Notes

  • For an extra punch of lemon, you can squeeze fresh lemon juice over the chicken just before serving.
  • This chicken pairs beautifully with a side of roasted vegetables, quinoa, or a light salad.
  • If you prefer a more intense basil flavor, blend the basil into the marinade instead of chopping it.
