Ingredients

  • For the Dough:
  • 1 package (2 1/4 tsp) active dry yeast
  • 1 cup whole milk, warmed to 110°F
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 3 1/2 cups all-purpose flour
  • 1 large egg
  • For the Filling:
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 2 tablespoons lemon zest
  • 1/2 cup fresh blueberries (or frozen, thawed and drained)
  • For the Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon heavy cream (optional for a thicker glaze)

Instructions

  • For the Dough:
  • Activate the yeast: In a small bowl, combine the warm milk, sugar, and yeast. Let it sit for 5-10 minutes, until the yeast is foamy.
  • Mix the dough: In a large mixing bowl, combine the yeast mixture, melted butter, vanilla extract, salt, egg, and 2 cups of flour. Mix until smooth. Gradually add the remaining flour, 1/4 cup at a time, until a dough forms.
  • Knead the dough: On a lightly floured surface, knead the dough for 5-7 minutes, until it becomes soft and elastic.
  • Let it rise: Place the dough in a greased bowl, cover with a damp towel, and let it rise for 1-2 hours, or until it doubles in size.
  • For the Filling:
  • Prepare the filling: In a small bowl, combine softened butter, sugar, and lemon zest. Mix until smooth and spreadable.
  • Roll the dough: Once the dough has risen, punch it down and turn it out onto a floured surface. Roll it into a rectangle, about 12×18 inches.
  • Spread the filling: Spread the lemon-sugar butter mixture evenly over the dough. Sprinkle fresh blueberries over the top.
  • Roll and cut: Starting from the long side, tightly roll the dough into a log. Cut the roll into 12 equal pieces.

Notes

  • You can use frozen blueberries, but make sure they’re thawed and drained before adding them to the rolls.
