- 2 small chicken breasts (or 1 large), diced
- 1 tablespoon olive oil
- 1 tablespoon butter
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup heavy cream
- 1/2 cup chicken broth
- Juice and zest of 1/2 lemon
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon Italian seasoning
- 1 cup potato gnocchi
- 1 cup baby spinach (optional)
- Fresh parsley, for garnish
Instructions
- Cook the Chicken: Heat olive oil and butter in a skillet over medium heat. Add the diced chicken, season with salt, pepper, and red pepper flakes. Sauté until golden and cooked through, about 5–6 minutes. Remove from the skillet and set aside.
- Make the Sauce: In the same pan, add garlic and sauté for 30 seconds. Pour in the heavy cream, chicken broth, lemon juice, and zest. Stir in Parmesan cheese and Italian seasoning. Let it simmer for 3–4 minutes.
- Cook the Gnocchi: Add gnocchi directly to the sauce. Let it simmer for 5 minutes until soft and tender. Stir occasionally.
- Combine Everything: Return the cooked chicken to the pan, add spinach (if using), and stir to combine. Simmer for another minute until everything is heated through.
- Serve: Garnish with fresh parsley and extra Parmesan. Enjoy warm!
