These Lemon Pistachio Bars combine the zesty freshness of lemon with the rich, nutty flavor of pistachios in a perfectly balanced dessert. Ingredients

  • For the crust:
  • 1 ¼ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • ¼ tsp salt
  • For the filling:
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 tbsp all-purpose flour
  • 2 tbsp lemon zest (about 2 lemons)
  • ¼ cup fresh lemon juice
  • 1 tsp vanilla extract
  • ½ cup pistachios, chopped (plus extra for garnish)

Instructions

  • Prepare the crust:
    Preheat the oven to 350°F (175°C). In a medium bowl, mix together the flour, powdered sugar, and salt. Add the softened butter and mix until the dough is crumbly and comes together. Press the dough into the bottom of a greased 8×8-inch baking pan. Bake for 15-18 minutes, or until the crust is lightly golden. Remove from the oven and set aside.
  • Make the filling:
    In a large bowl, whisk the eggs and granulated sugar until well combined. Add the flour, lemon zest, lemon juice, and vanilla extract, and whisk until smooth. Stir in the chopped pistachios.
  • Bake the bars:
    Pour the lemon pistachio filling over the warm crust. Bake for 18-20 minutes, or until the filling is set and lightly golden around the edges. Let the bars cool completely in the pan before slicing into squares.
  • Garnish and serve:
    Once cooled, sprinkle extra chopped pistachios on top for added texture and flavor. You can also dust the bars with powdered sugar for a finishing touch.

Notes

  • Make ahead: These bars can be made ahead and stored in the fridge for up to 3 days. They also freeze well for up to a month.
  • Pistachios: If you prefer, you can use salted pistachios for a little contrast in flavor, but unsalted pistachios are generally recommended to keep the bars balanced.
