4 boneless, skinless chicken breasts
1 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 tablespoons garlic powder
1 teaspoon onion powder
1 teaspoon dried parsley
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/4 teaspoon black pepper
2 eggs, beaten
2 tablespoons olive oil
1 tablespoon butter
Fresh parsley, chopped (for garnish)
Instructions
Preheat oven to 375°F (190°C).
In a shallow bowl, mix together the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, dried parsley, Italian seasoning, salt, and pepper.
Dip each chicken breast into the beaten eggs, ensuring it’s fully coated, and then press it into the Parmesan breadcrumb mixture, covering both sides.
Heat olive oil and butter in a large skillet over medium heat. Once the butter is melted, add the chicken breasts to the skillet.
Sear the chicken for 2-3 minutes per side, until golden brown.
Transfer the chicken to a baking dish and bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C).
Remove from the oven, garnish with chopped fresh parsley, and serve.
Notes
Use freshly grated Parmesan for the best flavor and texture.
You can use panko breadcrumbs for extra crunch.
Make sure not to overcrowd the skillet when searing the chicken.
