- 2 teaspoons kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1 (3- to 4-pound) whole chicken, cut into serving-size pieces
- 2 medium yellow onions, cut into wedges
- 4 to 6 whole garlic cloves, peeled
- In a large bowl, whisk together olive oil, kosher salt, paprika, cinnamon, and cayenne pepper to create a marinade.
- Add the chicken pieces, onion wedges, and garlic cloves to the bowl.
- Pour the marinade over the mixture and toss well to coat evenly. Cover and refrigerate for 1 hour.

- Arrange onions and garlic in a single layer in a 9×13-inch baking dish. Place chicken pieces skin side up on top.
- Roast uncovered for 30 to 35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
- Switch the oven to broil and cook for an additional 3 to 4 minutes, until the skin is crisp. Serve immediately.
