Juicy roasted chicken infused with warm spices, roasted over onions and garlic for a rich and aromatic Macedonian-inspired dish.

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon paprika
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1 (3- to 4-pound) whole chicken, cut into serving-size pieces
  • 2 medium yellow onions, cut into wedges
  • 4 to 6 whole garlic cloves, peeled

Instructions

  1. In a large bowl, whisk together olive oil, kosher salt, paprika, cinnamon, and cayenne pepper to create a marinade.
  2. Add the chicken pieces, onion wedges, and garlic cloves to the bowl.
  3. Pour the marinade over the mixture and toss well to coat evenly. Cover and refrigerate for 1 hour.
  4. Preheat the oven to 400°F (200°C).
  5. Arrange onions and garlic in a single layer in a 9×13-inch baking dish. Place chicken pieces skin side up on top.
  6. Roast uncovered for 30 to 35 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  7. Switch the oven to broil and cook for an additional 3 to 4 minutes, until the skin is crisp. Serve immediately.

  • Use smoked paprika for a deeper flavor variation.
  • Let the chicken rest for a few minutes before serving to retain juices.
  • Serve with rice, flatbread, or a fresh salad.
