Ingredients

  • 1 cup brown rice
  • 2 cups water
  • 1 teaspoon ground turmeric
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 ripe mango, diced
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/4 cup chopped green onions
  • 1/4 teaspoon black pepper

Instructions

  1. Rinse the brown rice under cold water until the water runs clear.
  2. In a medium saucepan, combine brown rice, water, turmeric, olive oil, and salt. Bring to a boil over medium-high heat.
  3. Reduce heat to low, cover, and simmer for 40-45 minutes or until the rice is tender and water is absorbed.
  4. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.
  5. Gently stir in diced mango, chopped cilantro, lime juice, green onions, and black pepper.
  6. Serve warm or at room temperature.
