Mango Graham Refrigerator Cake is a beloved Filipino no-bake dessert made with layers of sweet mangoes, graham crackers, and luscious whipped cream. Chilled until set, this refreshing treat is rich, creamy, and bursting with tropical flavor. It’s simple to prepare and perfect for hot days, celebrations, or as a quick make-ahead dessert.

Ingredients

  • 2 cups heavy cream, chilled
  • 1 cup condensed milk
  • 1 tsp vanilla extract
  • 23 ripe mangoes, peeled and thinly sliced
  • 1 pack (200 g) graham crackers
  • Crushed graham crackers, for topping

Instructions

  • Make the cream mixture: In a large bowl, whip heavy cream until soft peaks form. Gently fold in condensed milk and vanilla extract until smooth.
  • Layer the cake: In a rectangular dish, arrange a single layer of graham crackers at the bottom. Spread a layer of the cream mixture over the crackers, then top with sliced mangoes.
  • Repeat: Continue layering graham crackers, cream, and mangoes until all ingredients are used, finishing with cream and mango slices on top.
  • Add topping: Sprinkle crushed graham crackers over the final cream layer.
  • Chill: Cover the dish and refrigerate for at least 4–6 hours (overnight is best) until the cake is set and the crackers have softened.
  • Serve: Slice into squares and enjoy chilled.

Notes

  • Use ripe, sweet mangoes (like Carabao or Ataulfo) for the best flavor.
  • For a lighter version, use all-purpose cream instead of heavy cream.
  • Can be made 1–2 days in advance—the longer it chills, the better the flavor.
  • Try adding layers of peaches, strawberries, or mixed fruit for a twist.
