Ingredients

  • 1 lb (450 g) ground beef (or chicken/turkey)
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons taco seasoning (homemade or store-bought)
  • 1/2 cup tomato sauce (or salsa)
  • 3 cups cooked rice (white, brown, or Mexican-style)
  • 1 cup shredded lettuce
  • 1 cup cherry tomatoes, halved
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup corn kernels (fresh, canned, or roasted)
  • 1/2 cup black beans, rinsed and drained
  • 1 ripe avocado, sliced (or guacamole)
  • Sour cream or Greek yogurt, for topping
  • Fresh cilantro, chopped, for garnish

Instructions

  • Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
  • Add ground beef and cook until browned, breaking into crumbles. Drain excess fat if needed.
  • Stir in taco seasoning and tomato sauce. Simmer 5 minutes until flavors meld.
  • Divide cooked rice into bowls.
  • Top each bowl with taco meat, lettuce, tomatoes, cheese, corn, black beans, and avocado.
  • Finish with sour cream and cilantro. Serve immediately.
