1 lb (450 g) ground beef (or chicken/turkey)
1 tablespoon olive oil
1 small onion, diced
2 garlic cloves, minced
2 tablespoons taco seasoning (homemade or store-bought)
1/2 cup tomato sauce (or salsa)
3 cups cooked rice (white, brown, or Mexican-style)
1 cup shredded lettuce
1 cup cherry tomatoes, halved
1 cup shredded cheddar or Mexican blend cheese
1/2 cup corn kernels (fresh, canned, or roasted)
1/2 cup black beans, rinsed and drained
1 ripe avocado, sliced (or guacamole)
Sour cream or Greek yogurt, for topping
Fresh cilantro, chopped, for garnish
Instructions
Heat olive oil in a skillet over medium heat. Add onion and garlic, sauté until softened.
Add ground beef and cook until browned, breaking into crumbles. Drain excess fat if needed.
Stir in taco seasoning and tomato sauce. Simmer 5 minutes until flavors meld.
Divide cooked rice into bowls.
Top each bowl with taco meat, lettuce, tomatoes, cheese, corn, black beans, and avocado.
Finish with sour cream and cilantro. Serve immediately.
Notes
