Ingredients

  • 1 lb ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1/4 cup finely chopped onion
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp Worcestershire sauce
  • 1 tbsp ketchup (for topping)
  • 2 tbsp butter
  • 1 cup sliced mushrooms
  • 1 cup beef broth
  • 1/2 cup heavy cream
  • 1 tbsp flour
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, onion, egg, garlic powder, salt, pepper, and Worcestershire sauce. Mix until everything is well incorporated.
  3. Shape the meat mixture into a loaf shape and place it in a baking dish.
  4. Spread a thin layer of ketchup on top of the meatloaf.
  5. Bake for 45-50 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  6. While the meatloaf is baking, prepare the mushroom gravy.
  7. In a skillet, melt butter over medium heat. Add the sliced mushrooms and cook until softened and browned, about 5-7 minutes.
  8. Sprinkle the flour over the mushrooms and stir to combine. Cook for an additional minute to form a roux.
  9. Gradually pour in the beef broth, stirring constantly to avoid lumps. Allow the mixture to thicken, about 3-5 minutes.
  10. Stir in the heavy cream and continue cooking for another 2-3 minutes until the gravy is smooth and creamy. Season with salt and pepper to taste.
  11. Remove the meatloaf from the oven and let it rest for a few minutes before slicing.
  12. Serve the meatloaf with the mushroom gravy poured over the top.

Notes

  • For a leaner version, substitute ground turkey or chicken for the beef.
  • You can add other seasonings like thyme or rosemary to the gravy for extra flavor.
  • The gravy can be made ahead of time and stored in the refrigerator for up to 3 days.
