Instructions

  • Preheat the oven to 400°F (200°C).
  • Heat olive oil in a large skillet over medium heat. Add the chicken breasts, season with salt, pepper, and half of the oregano and thyme. Cook for 6-7 minutes per side, until browned and cooked through. Remove from heat.
  • In the same skillet, add zucchini, onion, and garlic. Sauté for 2-3 minutes until the vegetables are tender.
  • Arrange the chicken breasts in a baking dish. Top with the sautéed zucchini, onion, and garlic mixture.
  • Scatter cherry tomatoes, olives, and feta cheese over the top.
  • Sprinkle the remaining oregano and thyme over the dish and bake for 15-20 minutes, until the chicken is fully cooked and the vegetables are tender.
  • Serve hot and enjoy!
