Ingredients

  • 1 lb ground beef (preferably lean)
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 bell pepper, diced
  • 1 zucchini, sliced
  • 1/2 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled (optional)
  • Fresh parsley for garnish (optional)

Instructions

  • Heat a pan: In a large skillet, heat olive oil over medium heat.
  • Cook the ground beef: Add the ground beef to the pan and cook, breaking it apart with a spoon, until browned and cooked through (about 6-7 minutes).
  • Add vegetables: Add the onion, bell pepper, zucchini, and garlic to the pan. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  • Season: Stir in the oregano, basil, cumin, paprika, salt, and pepper. Cook for another 1-2 minutes, allowing the spices to bloom.
  • Finish with tomatoes and olives: Add the cherry tomatoes and olives to the pan, cooking for another 2-3 minutes until the tomatoes soften.
  • Serve: Top with crumbled feta cheese and fresh parsley if desired. Serve warm.
