This Mediterranean White Bean Salad is a refreshing, protein-packed dish made with creamy white beans, crisp vegetables, fresh herbs, and a tangy lemon vinaigrette. Perfect as a light meal or hearty side dish.

Ingredients

  • 2 cans (15 oz each) white beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp lemon juice
  • 1 garlic clove, minced
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the white beans, cherry tomatoes, cucumber, red onion, olives, and parsley.
  2. In a small bowl or jar, whisk together the olive oil, red wine vinegar, lemon juice, minced garlic, salt, and pepper.
  3. Pour the dressing over the bean mixture and toss gently to coat all ingredients evenly.
  4. Let the salad sit for at least 10–15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.
