This hearty Mexican Ground Beef and Potato Skillet is a flavorful one-pan meal packed with seasoned ground beef, crispy potatoes, and a blend of traditional Mexican spices. Perfect for a quick weeknight dinner, it’s easy to prepare, satisfying, and pairs well with fresh toppings like avocado and cilantro.

Ingredients

  • 1 lb ground beef
  • 3 medium potatoes, diced (about 3 cups)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional, for heat)
  • Salt and pepper, to taste
  • 1 cup diced tomatoes (canned or fresh)
  • 1/4 cup chopped fresh cilantro (optional, for garnish)
  • Optional toppings: shredded cheese, sour cream, sliced avocado, lime wedges

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced potatoes and cook, stirring occasionally, until golden and crispy, about 10-12 minutes. Remove from skillet and set aside.
  2. In the same skillet, add chopped onion and garlic. Sauté until softened, about 3 minutes.
  3. Add ground beef, breaking it apart with a spoon, and cook until browned and cooked through, about 6-8 minutes. Drain excess fat if needed.
  4. Stir in chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Cook for 1-2 minutes until fragrant.
  5. Add diced tomatoes and cooked potatoes back into the skillet. Stir well and cook for another 3-5 minutes until everything is heated through and flavors meld.
  6. Garnish with fresh cilantro and your favorite toppings before serving.
