Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 3/4 cup mini chocolate chips
  • Green food coloring (optional)
  • 1 cup powdered sugar, for rolling

Instructions

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper or silicone baking mats and set aside.
  2. In a large bowl, cream together the softened butter and 1/2 cup powdered sugar until light and fluffy.
  3. Mix in the salt, peppermint extract, vanilla extract, and green food coloring if using.
  4. Gradually add in the flour and mix until just combined.
  5. Fold in the mini chocolate chips.
  6. Scoop out dough and roll into 1-inch balls. Place on prepared baking sheets about 1 inch apart.
  7. Bake for 8 to 10 minutes or until the bottoms are lightly golden. The tops should not brown.
  8. Let cookies cool for about 5 minutes, then roll in powdered sugar while still warm.
  9. Let the cookies cool completely, then roll in powdered sugar again for a snowy look.

  • Use gel food coloring for a more vibrant green without altering the texture.
  • Cookies can be made ahead and frozen, then dusted with powdered sugar before serving.
