Ingredients

For the Cake:

  • 2 ½ cups (315g) all-purpose flour
  • 2 ½ tsp baking powder
  • ½ tsp salt
  • 1 cup (226g) unsalted butter, softened
  • 2 cups (400g) granulated sugar
  • 4 large eggs
  • 1 tbsp pure vanilla extract
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) sour cream

For the Frosting (Vanilla Buttercream):

  • 1 cup (226g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 2 tbsp heavy cream (or milk)
  • 2 tsp pure vanilla extract
  • Pinch of salt

Instructions

For the Cake:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. Cream Butter & Sugar: In a large bowl, beat butter and sugar until light and fluffy (about 3-4 minutes).
  4. Add Eggs & Vanilla: Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Incorporate Dry & Wet Ingredients: Alternate adding the dry ingredients and milk/sour cream to the batter, starting and ending with the dry ingredients. Mix until just combined.
  6. Bake: Divide batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool: Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

For the Frosting:

  1. Beat Butter: In a large bowl, beat butter until creamy.
  2. Add Powdered Sugar: Gradually add powdered sugar, mixing well.
  3. Mix in Vanilla & Cream: Add vanilla extract, heavy cream, and a pinch of salt. Beat until smooth and fluffy.
  4. Frost the Cake: Spread frosting between the cake layers and over the top and sides.
