These no-bake carrot cake energy bites are a healthy and delicious snack made with wholesome ingredients like oats, dates, carrots, and nuts. They’re quick to make and taste just like carrot cake – without the need for baking!

Ingredients

  • 1 cup (80 g) rolled oats
  • 10 Medjool dates, pitted (~1 cup or 200 g)
  • 1/2 cup (60 g) unsweetened shredded coconut
  • 1/4 cup (32 g) chopped walnuts
  • 1/4 cup (32 g) chopped pecans
  • 1/2 cup (60 g) shredded carrots, packed
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1/8 tsp salt

Instructions

  1. Add the dates to a food processor and process until broken down and sticky.
  2. Add the oats, coconut, walnuts, pecans, shredded carrots, spices, vanilla, and salt.
  3. Process until the mixture is well combined and starts to stick together. Scrape down the sides as needed.
  4. Scoop out about a tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture.
  5. Store the bites in an airtight container in the fridge for up to 1 week or freeze for longer storage.

Notes

  • If your dates are dry, soak them in warm water for 10 minutes and drain before using.
  • You can substitute nuts based on preference or allergies.
  • Make sure your carrots are finely shredded for easier blending and better texture.
