Ingredients
2 cups chocolate cookie crumbs
½ cup unsalted butter, melted
16 oz cream cheese, softened
½ cup granulated sugar
1 tsp vanilla extract
½ cup caramel sauce
½ cup semisweet chocolate chips
Sea salt flakes (optional, for garnish)
Instructions
Prepare the Crust: In a bowl, mix chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of mini cupcake liners or a lined mini muffin pan to form crusts. Refrigerate for 10 minutes to set.
Make the Cheesecake Filling: In a mixing bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
Assemble the Bites: Spoon or pipe the cheesecake filling over the chilled crusts, filling each about ¾ full.
Add Caramel Layer: Drizzle caramel sauce over the cheesecake filling in each bite.
Chill: Refrigerate the assembled bites for at least 2 hours or until firm.
Add Chocolate Topping: Melt the semisweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, until smooth. Drizzle the melted chocolate over each cheesecake bite.
Garnish (Optional): Sprinkle sea salt flakes on top of each bite for an added flavor contrast.
Serve: Allow the bites to set for a few minutes before serving.
Notes
For a richer flavor, use dark chocolate chips instead of semisweet.
Ensure the cream cheese is softened to room temperature for a smoother filling.
These bites can be stored in an airtight container in the refrigerator for up to 5 days.
