Ingredients

  • 2 cups chocolate cookie crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 1 tsp vanilla extract
  • ½ cup caramel sauce
  • ½ cup semisweet chocolate chips
  • Sea salt flakes (optional, for garnish)

Instructions

  • Prepare the Crust:
    In a bowl, mix chocolate cookie crumbs and melted butter until well combined. Press the mixture into the bottom of mini cupcake liners or a lined mini muffin pan to form crusts. Refrigerate for 10 minutes to set.
  • Make the Cheesecake Filling:
    In a mixing bowl, beat softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
