These No-Bake Lemon Truffles are a deliciously zesty, sweet treat made with wholesome, plant-based ingredients. They’re easy to make, naturally vegan, and perfect for a refreshing snack or dessert.

Ingredients

  • 1 cup (100g) ground almonds (almond flour)
  • 1/2 cup (40g) desiccated coconut, plus more for rolling
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • 3 tbsp maple syrup
  • 1 tbsp coconut oil (melted)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. In a mixing bowl, combine the ground almonds, desiccated coconut, lemon zest, and salt.
  2. Add in the lemon juice, maple syrup, melted coconut oil, and vanilla extract.
  3. Mix well until a dough forms. If the mixture is too wet, add a little more ground almonds or coconut.
  4. Roll the mixture into small balls using your hands.
  5. Roll each ball in extra desiccated coconut to coat.
  6. Place the truffles in the fridge for at least 30 minutes to firm up before serving.
