Deliciously chewy Oatmeal Fudge Bars combine hearty oats with rich, gooey chocolate fudge in every bite. Perfect as a snack or dessert, these bars are easy to make and loved by kids and adults alike.

Ingredients

  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup brown sugar, packed
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup unsalted butter, melted
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 can (14 oz) sweetened condensed milk
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine oats, flour, brown sugar, baking soda, and salt. Stir in melted butter until mixture is crumbly but holds together when pressed.
  • Press about two-thirds of the oat mixture firmly into the bottom of a greased 9×13-inch baking pan to form the base.
  • In a microwave-safe bowl, combine chocolate chips and sweetened condensed milk. Microwave in 30-second intervals, stirring between each, until smooth and fully melted. Stir in vanilla extract.
  • Pour the chocolate fudge mixture evenly over the oat base.
  • Crumble the remaining oat mixture over the top of the fudge layer.
  • Bake for 25-30 minutes or until the top is golden brown and set.
  • Remove from oven and let cool completely before cutting into bars.

Notes

  • Use quick oats if you prefer a finer texture, but rolled oats provide more chewiness.
  • For extra flavor, add a pinch of cinnamon to the oat mixture.
  • Store bars in an airtight container at room temperature for up to 5 days.
  • These bars can be frozen for up to 2 months; thaw before serving.
