One Pot Creamy Cajun Chicken Pasta

A rich and flavorful one-pot pasta made with tender chicken, Cajun spices, tomatoes, and a creamy sauce. This comforting dish combines bold seasoning and creamy texture for an easy weeknight meal.

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 lb boneless skinless chicken breast, diced
  • 23 tbsp Cajun seasoning
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • 8 oz penne pasta
  • 1 (15 oz) can fire-roasted diced tomatoes
  • 2 cups chicken broth
  • 2 oz cream cheese
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 green onions, sliced

Instructions

  1. Heat olive oil and butter in a large deep skillet or pot over medium heat.
  2. Add diced chicken and 1 tablespoon of Cajun seasoning. Cook until the chicken is lightly browned on the outside.
  3. Add the diced onion and cook for 2–3 minutes until softened. Stir in the minced garlic and cook for about 30 seconds.
  4. Add the uncooked penne pasta, diced tomatoes with juices, chicken broth, and remaining Cajun seasoning. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat to medium-low. Cover and simmer for about 10–12 minutes, stirring occasionally, until the pasta is tender.
  6. Add the cream cheese and heavy cream, stirring until the cream cheese is fully melted and incorporated into the sauce.
  7. Stir in the Parmesan cheese and cook for another 1–2 minutes until the sauce thickens.
  8. Taste and adjust seasoning if needed, then garnish with sliced green onions before serving.

Notes

  • Adjust the amount of Cajun seasoning to control the spice level.
  • You can substitute shrimp or sausage for chicken if desired.
  • If the sauce becomes too thick, add a splash of chicken broth or milk to loosen it.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
