Ingredients

  • 1 lb ground chicken
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon dried basil
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large pot over medium heat. Add the ground chicken and cook, breaking it up with a spoon, until browned and cooked through. Season with salt, pepper, Italian seasoning, basil, and red pepper flakes (if using). Remove the chicken from the pot and set aside.
  • In the same pot, add the diced onion, garlic, carrots, and celery. Cook for about 5-7 minutes, until softened.
  • Return the cooked ground chicken to the pot. Add the chicken broth and bring the mixture to a simmer. Let it cook for 10-15 minutes, allowing the flavors to meld.
  • Stir in the heavy cream and chopped spinach. Simmer for an additional 5 minutes, until the spinach wilts and the soup thickens slightly.
  • Taste and adjust seasoning if needed. Stir in the grated Parmesan cheese.
  • Serve hot, garnished with fresh parsley if desired.
