Ingredients

  • 8 oz (225g) noodles (such as udon, rice noodles, or spaghetti)
  • 1 tablespoon vegetable oil
  • 1 small onion, sliced
  • 1 bell pepper, thinly sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1/4 cup water
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon cornstarch (optional for thicker sauce)
  • Sesame seeds (for garnish)
  • Sliced green onions (for garnish)

Instructions

  • Cook Vegetables: Heat the vegetable oil in a large pot over medium heat. Add the sliced onion, bell pepper, and carrot. Sauté for about 3-4 minutes until tender.
  • Add Garlic: Add the minced garlic and cook for another 30 seconds until fragrant.
  • Prepare Sauce: In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, sesame oil, and water. Add grated ginger and cornstarch if you want a thicker sauce. Pour this sauce into the pot with the veggies.
  • Cook Noodles: Add the noodles to the pot and stir to coat them in the sauce. Bring the mixture to a simmer and cook for about 5-7 minutes or until the noodles are cooked through and the sauce has thickened.
  • Serve: Garnish with sesame seeds and sliced green onions. Serve hot and enjoy your one-pot teriyaki noodles!

Notes

  • Feel free to add your favorite veggies, like snap peas or mushrooms, for extra flavor and texture.
  • If you prefer gluten-free noodles, substitute with rice noodles.
  • For added protein, consider adding cooked chicken, tofu, or shrimp.
